Microgreens vs Sprouts — What’s the Difference?

Microgreens vs Sprouts: Clear Differences

People often use the words interchangeably, but microgreens and sprouts are different crops with different flavors, textures, and uses. At Charlie's Greens in Miami, we grow microgreens indoors in a controlled indoor / indoor vertical farm — young vegetable and herb plants harvested above the growing medium after true leaves appear — not sprouts. Understanding the difference helps you cook with confidence and order the product you actually want.

How they are grown

Sprouts germinate in water or a damp chamber and are eaten whole — seed, root, and shoot — usually within a few days. Microgreens are grown in a shallow growing medium under controlled indoor lighting, develop stems and first leaves, and are cut just above the root line. At Charlie's Greens, that entire process happens indoors in our Miami vertical farm. The extra time under indoor light builds chlorophyll, deeper color, and a more plant-like flavor than the mild crunch of sprouts.

Flavor and kitchen use

Sprouts are crisp and watery, great for sandwiches when you want subtle crunch. Microgreens deliver concentrated taste: peppery radish notes, sweet pea tendrils, fragrant basil, or a balanced Super Green or Color Mix. Chefs and home cooks in Miami use our indoor-grown microgreens as finishing greens on tacos, eggs, bowls, seafood, and salads because a small handful adds aroma without cooking.

Food safety context

Because sprouts grow in warm, wet conditions with the seed intact, they have historically drawn more food-safety attention. Microgreens grown indoors with good controlled-environment practices and cut cleanly for delivery are a different category. Charlie's Greens focuses on fresh-cut microgreen mixes from our indoor Miami farm for local delivery so you can plate them the same day they arrive.
